This Friday, July 23 an owner of the wine import company who brought Lolaila Sangria and other fine Spanish wines to the States will be at Fiesta Friday on the Patio at the Hilton Harrisburg. Come and met Lou Restivo of Biago Cru and enjoy the great Sangria and wonderful, specially priced appetizers.

 

Quenching a Summertime Thirst

Warm weather brings rising thirst and what better way to quench that craving than with refreshing adult-friendly beverages.


Cocktails:


Mint Julep is as much a summertime tradition as watching the Kentucky Derby. Garnished with a sprig of mint, this strong cocktail can be enjoyed throughout the warm months. Made famous at Kentucky’s Church Hill Downs, the Mint Julep combines bourbon, sugar, water and mint.
 

To make a Mint Julep, you will need:
• 1 shot of Bourbon
• 1 tsp of fine grain sugar
• 1 tsp of water
• Crushed Ice
• 3 sprigs of fresh mint
• Collins Glass
• Muddler
Instructions for making a Mint Julep:
1. The first step in creating a Mint Julep is to muddle two sprigs of mint with sugar and water. Muddling involves smashing the dry ingredients in the bottom of the glass with a bar tool called a muddler. This tool can look like the bottom of a baseball bat. Once ingredients are well combined, add water.
2. Add desired amount of crushed ice, and pour bourbon on top.
3. Garnish the glass with a mint sprig.


The Long Island Iced Tea has been served as a summer cocktail since the 70s. This highball drink combines four different kinds of liquor with triple sec, sour mix and cola. Because the Long Island Iced Tea contains five shots of alcohol in one serving, this is best consumed conservatively, especially on a hot day.
 

To make a Long Island Iced Tea, you will need:
•  Ice
• 1 shot of vodka
• 1 shot of gin
• 1 shot of rum
• 1 shot of tequila
• Splash of triple sec
• Splash of sour mix
• Splash of cola
• Cocktail shaker
Instructions for making a Long Island Iced Tea:
1. Combine ice, liquor, triple sec and sour mix in a cocktail shaker and shake vigorously.
2. Pour contents in glasses and add cola on top.


Beers:


Served at a cooler temperature than most beer, the Pilsner is an excellent choice when seeking out summertime beer. This beer’s pale straw color provides a refreshing and drinkable option when hosting an outdoor party or crawfish boil. Sam Adams Noble Pils is a good example of this beer style. A citrus undertone combines with a crisp finish, making this brew a refreshing treat on a hot summer day.


Pale Ale provides a light hoppy flavor that is best served cold. This beer is more flavorful than a Pilsner. A prominent floral aroma makes this beverage ideal for the spring and summer seasons. Anchor Liberty Ale by Anchor Brewing Company is an excellent example of an American Pale Ale.
 

Wines:


There's no better way to relax on a warm, sunny day than by enjoying a refreshing glass of wine. While you shouldn't neglect your bold rich favorites, certain wines are generally lighter, less alcoholic, fruit-forward, and make perfect summertime sippers.

New Zealand Sauvignon Blanc is a racy, aromatic, white wine. A perfect picnic wine, the tangy acidity of Sauvignon Blanc makes it the ideal accompaniment to cold salads such as tarragon chicken, shrimp, or crab.

Torrontés is Argentina's signature white grape variety. It's lively and intensely aromatic with floral notes and the flavors of orange blossom, green apple, and tropical fruit. Torrontés wines can be just a tad bit sweeter than the other summer-perfect selections, which are completely dry. What makes these great summer wines? They're delightful on their own and are also a perfect match for foods such as curry chicken salad with raisins or a salami and cheese plate.

Perhaps no other wines say summertime quite like Rosés–and if you haven't tried them yet, now is the time. Rosés are dry, crisp, fresh, and burst with ripe red fruit flavors of strawberries and raspberries. They can also be herbal, floral, and earthy. Made from red grapes, rosés are pink in color and lighter in tannins because the skins of the dark grapes are removed before the fermentation process. Perfect on a hot day, these refreshing, chilled wines go great with all types of salads, cold cuts, and even grilled turkey burgers. Some favorite brands include the IM Rosé with rich, bright summer flavors or the Hecht and Bainer Rosé which delivers an incredible wow.

For die-hard red wine lovers, no matter the menu, there is a perfect wine for your summertime grilling: Beaujolais. Made exclusively from the Gamay grape, Beaujolais wines are soft, fruity, and flavorful. There are various levels of Beaujolais. Try the more youthful ones labeled "Beaujolais" or "Beaujolais Villages," which are best enjoyed slightly chilled. An extremely food-friendly wine, Beaujolais goes well with everything from grilled hamburgers to light summer salads to simple turkey and cheese sandwiches.

The New Flavors of Bricco

On July Fifth, Chef Jason Viscount rolled out his new summer menu at Bricco. The new dishes for this season are among some of Viscount's favorites: Bollito Misto with Cotechino Sausage, Smoked Chicken and Pork Confit is a wonderful, savory entree full of rich meat flavors and the Grilled Quail with Chianti-cooked Capellini, Crimini Mushrooms, Peas and Pecorino is unique, colorful and will get your taste buds to dance.

Viscount is also rolling out some fresh, eco-friendly concepts with the new summer menus: A "Sustainable Seafood Special" will be offered daily. Seafood is sustainable when the population of that species of fish is managed in a way that provides for today’s needs without damaging the ability of the species to reproduce and be available for future generations; Local farm-fresh produce will be served all summer long. Bricco has join the Lancaster Farm Fresh Cooperative to receive the best local organic produce. The cooperative serves the Tri-State area by connecting the customer to the farmer and their wonderful array of produce and humanely raised and pasturized animal products.

The Coolest Bar in Town

Beverage purists argue that ice should never be introduced to a quality Scotch whiskey. Such thinking rests on the theory that when holding a glass, your body heat will melt the ice, resulting in a diluted spirit and sub-par drinking experience.


In order to make a Scotch cold without diluting it, Scottish whiskey purveyors The Macallan created a clever ice ball maker. The machine creates a ball of ice precisely sized to fit into an average tumbler. The spherical nature slows the melting process making it less susceptible to hand warmth, preserving the liquor while keeping it refreshingly cool.


In addition to being practical, the machine is noteworthy as an artifact unto itself. Inspired by Japanese bartenders who hand carve their ice balls, the machine uses two heavy copper plates while gravity slowly presses blocks of ice into perfectly spherical shapes.


The coolest part of all . . . the third Macallan ice ball maker in the country resides at Bricco. Stop by the bar and enjoy an experience that only a few people have yet witnessed. Watching it at work is almost as enjoyable as drinking the scotch but not quite.

The Hilton's 20th Anniversary "20 Hour Charity Grilling Party."

The Hilton Harrisburg began its 20th anniversary celebrations with 20 hours of grilling for a great cause. The grills were sizzling on Friday, June 25, from 6:00 AM until 2:00 AM Saturday morning!

Each hour featured a local “Grill Master” serving up delicious selections from cinnamon rolls to hamburger sliders and crab-stuffed scallops. Hundreds of guests were served through out the day resulting in over $3,700.00 raised for the Easter Seals of Central Pa.


A great deal of work was invested in the successful completion of this project. And the reward was felt by everyone involved. It brought our "neighborhood" together for a celebration and a worthwhile cause.

Chef's Corner

Chicken-and-Black Bean Quesadillas

What You'll Need:

  • 1 Tablespoon Fajita Seasoning
  • 2 (4-ounce) Skinned and Boned Chicken Breast Halves, Cut into Thin Strips
  • Vegetable Cooking Spray
  • 1/2 Onion, Cut into Strips
  • 1/2 Green Bell Pepper, Cut into Strips
  • 2 Garlic Cloves, Minced
  • 1 to 2 Jalapeño Peppers, Minced
  • 1 (15-ounce) Can Black Beans, Rinsed and Drained
  • 1/2 Cup Fresh Cilantro, Chopped 
  • 4 (10-inch) Flour Tortillas
  • 1 1/2 Cups (6 ounces) Shredded Reduced-Fat Monterey Jack Cheese
 
Chefs Corner

Rub fajita seasoning on all sides of chicken; cover and chill 30 minutes.


Cook chicken in a large nonstick skillet over medium-high heat, stirring constantly, 4 minutes or until done. Remove from skillet, and keep warm.


Coat skillet with cooking spray; add onion and next 3 ingredients, and sautee until tender. Stir in black beans and cilantro; cook, stirring constantly, until thoroughly heated.


Coat 1 side of each tortilla with cooking spray; layer chicken, vegetable mixture, and cheese evenly on uncoated side of half of tortillas. Top with remaining tortillas, coated side up. Cook in skillet over medium heat until lightly browned, turning once. Serve immediately.

Sous Chef, Jeff Lagyak

Jeff Lagyak joined the Hilton culinary team in June 2006. He adds a great sense of humor and energy to all of his work.

Jeff has two lovely pre-teen daughters that keep him busy with life outside of work. He is also a Sergeant in the United States Army Reserves. In 2007/08 he served overseas in Iraq for one year. Jeff is slated to serve our country once again with a deployment scheduled for January 2011. Jeff has been very successful at the Hilton as well as in the Army Reserves, having received numerous Army awards for his culinary talents. We appreciate all that he has done for us and our country.

The recipe that Jeff shared with us is a family favorite. It is a great dish that can be prepared in advance and put together for a quick dinner after a full day of school and sports or enjoyed as a late night snack.
